Let the new tea season begin with a banger like this. One of those really hard to get teas, we're happy to have it back straight after 2019! Harvested in September 2023, this matches the memories we have of our first batch of "Highland Gold" tea.

 

The dry aroma is sweet with notes of dates and malt. When placed on the heated ware, we get a hint of chocolate and honey. The infusion is a sight to behold with the golden tips turning red right after the water hits the kettle. The liquor presents you with notes of caramel and malt at the beginning, reserving its complexity for the time it cools down. On further sips, you can enjoy the milky texture along with the honey notes it has to offer. You can also taste a bit of an Indian sweet called soan papdi, matching the vibe of upcoming festive season, when the boxes of the sweet finds its way into each and every meme page and dining table of India. Once it cools down, you can taste the milk chocolate along with notes of fresh cream. The liquor coats your mouth well and the aftertaste stays with you for a long time. The aftertaste has notes of dates, oranges and of course, malt. A delicious experience, we recommend you experiement beyond our suggested temperature and ratios, it will have something interesting to reveal in every brew!

Steeping Time : 3.5 minutes western style, 35 seconds gongfu style adding 5 seconds every subsequent steep
Leaf to water ratio :  1.5 gram per 100ml for western style, 5 grams per 100ml for gongfu style

Recommended Steeping Temperature : 90°C
